Fazenda Matão is a family-run farm located in the Mogiana region of São Paulo, surrounded by rolling green hills and natural reserves. The farm dates back to the 1960s and is today managed by Marco Antonio Guardabaxo together with Marciano de Jesus.
Coffee production here is deeply connected to the local community, with families living and working on the farm. The focus is on long-term sustainability, combining traditional knowledge with modern agricultural practices, including water-saving irrigation systems and careful land management.
This lot is processed using the natural method. After harvesting, the cherries are dried whole on large patios for 10–20 days, allowing fermentation to happen slowly inside the fruit. The coffee is then stabilized in wooden silos before milling.
This extended drying and fermentation process enhances sweetness, body, and structure, resulting in a dense, creamy cup with deep, rounded flavors.
Mundo Novo is a hybrid of Bourbon and Typica, widely cultivated in Brazil for its resilience and consistency. It produces balanced coffees with classic chocolate and nut characteristics, making it particularly well suited for espresso.
